'Hachiya' persimmons are astringent until fully ripe then they are very sweet and soft.  It is an excellent variety for culinary uses including recipes for cakes, cookies, and puddings.  It is especially good for making the traditional Japanese delicacy, the slow-dried persimmon called 'Hoshigaki'.
